Guidelines for Blast Chilling
The Adande Blast Chiller guidelines are specified in accordance with EU standards as follows: To cool 5 kg of mashed potato from +70 °C to +3 °C in 90 minutes when held in a metal 1/1 GN pan with product spread evenly to a depth of 25 mm, covered with cling film.
